それは政府のどこの管轄なのか?という疑問に答えてくれる記事。

アメリカで食品の衛生管理に携わる部署は2つ、FDAとUSDA。全く関係ない2部署が食品の安全を取りまとめている。双方のミッションステートメント

FDA:the foods people eat in the U.S. are safe, wholesome, sanitary and properly labeled.”

USDA: “provide a safe, sufficient, and nutritious food supply for the American people.”

これだけじゃ違いがよくわからんw。

んで記事に細かく書かれてるけど、大雑把に言えばUSDAは主に(プロセスされていない)肉のインスペクション担当。処理されたものはFDA、ただし生肉でもソーセージのケーシングはFDA、栄養分がないからだそう…。

シーフードはFDA、でも養殖物はUSDA。

卵は製品にするとUSDA、生卵はFDA、ただしグレードはUSDAが決める。卵なしの乳製品はFDA、その他生野菜・パッケージ食品もFDA。ふぅ。最後にこんなのまで、

It’s when meat shows up on packaged sandwiches and pizza that interesting exceptions to USDA/FDA rules emerge. Open-faced meat sandwiches, where the ratio of meat to bread and other ingredients is more than half, are regulated by the USDA. But closed sandwiches, which have two slices of bread, are regulated by the FDA because the ratio of meat to other ingredients is less than 50 percent. 

 肉系オープンサンドイッチ、肉の割合が半分以上だとUSDA、その他クローズドなサンドイッチ(二枚のパンで挟んだもの)はFDAとか…。

結局わけわからんということがわかった。もうどうでもいいや、しっかり衛生が保たれてればw。
