奥がスーパーで見つけて思わず買ってきたこのパン。
「サワードウ」でしかも地元Watsonville産。更に原材料が、
おお！なんとシンプルしかも基本に忠実。味はかなり酸味の強い、いわゆる「サンフランシスコ・サワードウ」。Boudinに似ている。このSumano's Bakeryという地元Watsonvilleのパン屋について調べたらこんな記事、というかウィキペディアのエントリを発見。

カリフォルニアのパンの歴史。これは大変興味深い。今でこそTartineを始めとしたArtisan Bread花盛りだけれど、そこに至るまでの歴史が克明に。自分が知ってるカリフォルニアのパン勢力図はほんの最近の出来事にすぎないことを悟る。Chad Robertsonに至っては名前さえ出てこない。
特に興味を引いたのが"Artisan Bread Movement"の項。ちょっと挙げてみると、
- 最初に"artisan"なパンを焼いて売りだしたのはなんと禅宗のお坊さんたち。
- 今でこそカリフォルニアピザ屋だけれど、黎明期はバークレーの"Cheese Board Collective"が影響力を持っていた。
- Acme Breadの創始者は元Chez Panisseのバスボーイ（皿片付け係）。Cheese Board CollectiveがChez Panisseの需要に答えられなくなったことでChez Panisseお抱えパン職人に昇格。Acme創設時の資金の半分はDoobie BrothersのPatrick Simmonsが出資。
他にもいろいろあるけれど、件のSumano's Bakery、こんな件で登場。
