この前も書いたけれど、食品業界にはbuzz wordがあって、パン業界なら"artisan"、トマト系野菜なら"heirloom"。
来週はサンクスギビング。サンクスギビングといえば七面鳥。で、七面鳥のバズワードがこの"heritage"。
A heritage turkey is one of a variety of strains of domestic turkey which retains historic characteristics that are no longer present in the majority of turkeys raised for consumption since the mid-20th century. Heritage turkeys can be differentiated from other domestic turkeys in that they are biologically capable of being raised in a manner that more closely matches the natural behavior and life cycle of wild turkeys.

品種改良されて巨大化した食用七面鳥と違い、七面鳥が本来持つ性質を受け継いでいる品種。エアルームトマトと全く同じ性格のもの。味もこっちのほうが野生に近く、美味しいとされている。生産量が少なくもちろん値段もお高い。
だったらやっぱりこの辺りにいる野性の七面鳥をとっ捕まえて料理するのが一番かもしれん。
