Pho PapaThere's a great bowl of beef pho in San Jose at a place called Pho Papa, located near a Target and Boiling Crab in the Viet-American community. My husband and I were intrigued by the fact that they do not make any other dishes aside from pho noodle soup and beverages. A focus on pho signals good things. Pho Papa has a clearly visible kitchen and the cooks (mostly women when we visited) use a gentle touch on their northern-style pho. Some Yelpers say the broth is not strong enough but I say it's very good. Want extra umami? Add fish sauce to your bowl. That's what the bottle on the table is for!If you're nearby – it's in the southern part of San Jose, check it out. We had a fine late lunch on a quiet Tuesday. There's outdoor seating. The staff is polite, professional. You pay about $15 for a satisfying small bowl with fresh noodles. Get the large noodles. I don't know were the name comes from but it's easy to remember Pho Papa.
