日本生まれ日本育ちなんで、コンビーフと言ったらノザキのコンビーフ缶である。ただアメリカに来て以来コンビーフ、というかcorned beefと言ったらセントパトリクスデーのブライン漬けのこれ、
なのでアメリカにコンビーフ缶はないのか、と思っていた。が、先日Costcoで発見。
そうそう、これこれ。もちろん缶の底には、
これ引っ剥がして開けるんだよね。ということで今日のピザに使ったんだけど、
なんでこう全く違うものをcorned beefと呼ぶのか気になったんでググった。
Corned beef in the US would translate to something like salt beef in the UK. This is beef that has been cured in a brine. The brine is usually prepare with salt, sodium nitrite and a number of pickling style spices. Once brined, you have salt beef. This can be cooked as is or rubbed and smoked to produce pastrami.
Corned beef in the UK is called bully beef elsewhere. This is minced salt beef with gelatin and fat mixed in. It’s canned and served cold or heated up as a hash with potatoes.
なるほど、アメリカとイギリスで違うものを指すのか…。そういえばCostcoのコンビーフ缶もオーストラリアからの輸入物。例によってアメリカ vs. コモンウェルスの図式。
