Hole In The Wall


多分一番の出来(out of 4 bakes)。

Risen relatively well this time.
ただし、やっぱりscoringが上手くいかん。今回はserrated knife(刃が波状のナイフ)で入れたけれど、相変わらず"ear"が立たず。幅も今ひとつ。

  • 12/26/2013 19:15:54: Revived (fed) the starter for the 4th bake. This time I cut the volume to half of the recipe (37.5g starter + 37.5g bread flour + 37.5g whole wheat flour + 75g warm water).
  • 12/27/2013 05:09:51: After 12 hours. Looks like lessening the volume by half does not seem to affect the starter feeding. Rather it seems more active.
  • 12/27/2013 19:05:02: Made the leaven. This time I did not warm it so that it would slowly ferment.
  • 12/28/2013 14:20:19: Not much bubbles on the surface. Passed the floating test anyways.
  • 12/28/2013 21:09:11: Resting on the work surface after the bulk fermentation. This time, I make only one loaf.
  • 12/29/2013 05:52:41: For the final rise. Now it will rest at the room temp.
  • 12/29/2013 10:22:53: Final rise done (8hr in the fridge + 4hr at room temp)
  • 12/29/2013 10:24:30: About to be baked
