ブルーチーズと原爆。

久々チーズネタ、こんな記事を読んだ。

ブルーチーズに使われる青カビについての解説。その学名が"Penicillium roqueforti"と言うんだそう。王様ロックフォールじゃないですか。

で、他のブルーチーズ、ゴルゴンゾーラスティルトンそれぞれ"P.glaucum"/"P.stilton"という、"technological"な種類としてあるけれど、実はそれはP.roquefortiに属してるんだそう。全てのブルーチーズはロックフォールに通ず。

Penicillium roqueforti is used for Roquefort and Penicillium glaucum is used for Gorgonzola. This is a bit of a half-truth. Names like P. glaucumP. stilton, etc. are known as “technological” species. Actually, they are all sub-species of P. roqueforti

nuworld Cheese

Bacteriology Professor Stanley Knight, of the University of Wisconsin, was inspired by this work and decided to expose Penicillium roqueforti to UV lights to see what mutations might occur. Interestingly enough, he created a mutant strain that didn’t turn blue – it was white.

 ブルーチーズの青カビに紫外線を当てたら緑色ではなく白い亜種が。これを使って作ったのがこの"nuworld"チーズ。外見は白いけど、味はブルーチーズなんだそう。このストレインをチーズとして完成させたミネソタ大学でのみ購入可能。

うーん、これは試してみたいけど、これのためにミネソタまで行くのはムリだな。

で、もうちょっと先の資料読んでて解ったのが、上の引用にある"inspired by the work"とあるのがこの実験:

マンハッタン計画(マンハッタンけいかく、Manhattan Project)は、第二次世界大戦中、ナチス・ドイツなどの一部枢軸国原子爆弾開発に焦ったアメリカイギリスカナダ原子爆弾開発・製造のために、科学者、技術者を総動員した計画である。計画は成功し、原子爆弾が製造され、1945年7月16日世界で初めて原爆実験を実施した。さらに、広島に同年8月6日長崎8月9日に投下、合計数十万人が犠牲になり、また戦争後の冷戦構造を生み出すきっかけともなった。

 被爆の影響を調べるためにショウジョウバエで行った実験が"nuworld"誕生のきっかけとか…。新種のブルーチーズと原爆、、、考えさせられるものがある。
